Lavender Simple Syrup
If you’re at all like me, you have lavender of many types dappled in your garden. I recently discovered that you can just make your own simple syrup that can be added to any little drink you so please - so let me share this with you, too!
Start with 1/2 cup of lavender blooms, stems mostly removed. The fresher, the better, but any lavender will do - even spent blooms.
Place lavender into a strip of cheesecloth. (Optionally, if you don’t have cheesecloth, you can strain the lavender from the syrup later).
Tie the cheesecloth to hold the lavender.
Place the lavender into a saucepan and add 1 cup of sugar.
Add 1 cup of water and mix together.
Bring the mixture to a rolling boil and cook for 3-5 minutes. Stirring is optional here.
Reduce the heat to a gentle simmer and cook for 10 minutes.
Remove from heat and let stand for 30 minutes.
Two options here:
For less color and flavor, remove the lavender satchel (squeeze it out into the syrup when removing)
For stronger color and flavor, leave the satchel in the syrup and let stand at room temperature for one hour. Refrigerate with the satchel in the syrup for several more hours (3-6, more won’t hurt!)
Remove the lavender (squeeze the satchel into the syrup when removing).
Store in the refrigerator until ready to use, share or gift! Use within 7 days.
